Project Description: A thorough assessment of the food procurement needs for local institutions such as Wolf Ridge, SB Vets Home, local schools, local restaurants and potentially others in order to demonstrate to local producers interested in scaling up or starting a food-related business that there are markets for their products locally. To develop a database of local institutions and their annual needs for meat, dairy, veggies etc.
